The Holiday Salad of my Dreams.

You can still eat fresh and get those warm, cozy vibes. This salad totally does it for me. 

Roasted Sweet Potato
Crumbled Feta Cheese
Dried Cranberries
Walnuts
Greens
Olive Oil + Red Wine Vinegar
Black Pepper

I roast the cubed sweet potatoes in a whole lotta olive oil until they are tender.. about 10 mins. Adding to a bowl, mixed greens, dried cranberries (essential for the winter taste), crumbled feta cheese, whole raw walnuts, and top with a combo of more olive oil, red wine vinegar, and cracked black pepper.

Simple, filling, and nutritious. This is a salad I can eat for lunch over and over again.
